I’m excited to share that my recipe was featured on Protein Pow for The 2014 Protein Wizard Competition! Unfortunately, I did not win the competition, but hey, that’s not what’s important. I was happy that I was able to share a delicious G L U T E N – F R E E  &  V E G A N recipe on a site that only has a few of those types of recipes! <3

Vanilla Chai Banana Bread Protein MuffinsWhat I created were these Vanilla Chai Banana Bread Protein Muffins and served them with a Strawberry Protein Jam. You can sub any type of protein powder you would like in this, but I used the Vega One Vanilla Chai for mine. Enjoy!

Vegan Vanilla Chai Banana Bread Protein Muffins

Ingredients

  • 1.5 tbsp golden flax meal + 3 tbsp water
  • ¾ cup spelt flour
  • ¼ cup Vega One Vanilla Chai Protein Powder
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp stevia **see note**
  • 2 medium bananas, mashed
  • ¼ cup unsweetened applesauce
  • ¼ tsp vanilla extract
  • ¾ tsp ground cinnamon
  • 1/8 tsp nutmeg
  • 1/8 tsp ginger
  • Pinch of cloves
  • Pinch of salt
  • Chopped hazelnuts and/or toasted coconut chips (I used Dang)

Instructions

  1. Mix together the flax meal with water to form “flax-egg”. Set aside.
  2. Preheat oven to 350 degrees and grease a cupcake or muffin pan with coconut oil.
  3. Process/blend applesauce, banana, flax egg, stevia, vanilla, salt and spices.
  4. In a large bowl, mix together the flour, protein powder, baking powder and baking soda.
  5. Add the wet ingredients to the dry, and mix together. Do not to over-mix!
  6. Fill your pan ⅔ full of mixture and top with nuts or coconut if desired.
  7. Bake for about 13-15 minutes.
  8. Top with protein jam and enjoy!

Notes

I have only tried this recipe using stevia. Adding a sweetener, liquid or dry, with more volume or a different texture may result in a different texture in the resulting muffins.

    Yummy! I do have some deep Chai LOVE! <3 =D
    Uni snacks here we come! =D

    Quick question if i may: If i leave out protein powder do would i need to sub in other chai flavour booster things? (how much flavour does the powder add? should i up the spices? brew some chai tea?)
    And should i just up the spelt flour a bit to compensate for less dry ingredients?

      Yay, I hope you try these! You certainly will need to add more dry ingredients to make up for the removal of the protein powder. I have never tried this, so I would just use an equal amount of spelt. The chai has a lot to do with the protein, so what you can do is increase the spices in the batter, and/or add in traditional chai spices! I have actually baked chai cookies by simply emptying out a chai tea bag into the batter. It sounds crazy and that it might be strong but it was perfect with the cookies, so I think it will work with this too 🙂
