11 Sep A Healthy Vegan {21st} Birthday Celebration
Below I have shared with you celebration and/or present ideas either for your birthday or for that of a loved on in your life. I hope I inspire you in any which way I can to consider this lifestyle and to choose H E A L T H everyday.
I started my birthday with a beautiful bowl of {raw} fig newton apple cinnamon ‘oatmeal’ with cinnamon vanilla nice cream + a few gifts I received in the mail. It was just like eating dessert for breakfast, but completely guilt-free! All you have to do is pulse apples, figs, dates and spices in a food processor until a desired consistency is reached, then top it with banana ice cream spiced up with cinnamon and vanilla extract.
I am celebrating a whole new year. I have been blessed to reach 21 years of life and I cannot wait to see what is in store for my future and who I will become. I constantly grow to know myself in a whole new light, and hold a greater and renewed sentiment of self-love. It’s crazy to think about how in charge we all are of our own paths. This past year I strove to guide myself towards positivity and gratitude. I thank every person in my life for making this past year all that it was and I thank all of you here for your love and support.

Drinks!
No vodka or whiskey shots here! Instead, we made green juice shots {coconut water, cilantro, cucumber and celery}.
Did we pop Bottles? Nah, we cracked Cocos!
Instead of dehydrating our bodies with alcohol, we rehydrated our bodies with fresh young thai coconut water! We were able to open about 10 coconuts in 2 minutes. Yes, 2 minutes. Food!
We enjoyed a nice dinner outside on my backyard patio under the stars. I have lights above the outdoor tables, so it was perfect for dinner. I also have our barbecue grill outside as well, so we were able to serve the food fresh off of the grill, nice and warm.
We started our dinner with Grilled Vegetable Salads. My mom grilled the vegetables {asparagus, mushrooms, bell peppers, corn, zucchini, eggplant and yellow squash} and laid them out buffet style on the table, along with our choice of spinach or baby romaine, so we could make the salads how we like. My mom made my vegetables without oil or salt, and the dressing I used was simply just lemon juice. We also had fresh tomatoes, herbs and homemade salsa to add on as well.
For the next course, my mom surprised me with my Portobello Asada Taco Plate recipe from my ebook! This was the entree of the night. It got dark and honestly the photos with the artificial lighting on my food was not up to par, so I decided to put these snazzy photos from my ebook up instead since they are more appealing. The taco plate consisted of three things: Portobello Asada Tacos {in a gluten-free non-GMO fresh and locally made tortillas from Kernel of the Truth Organics (LA locals, check them out!) with avocado, salsa and fresh cilantro from my garden}, garlicky black beans and my one-pot Spanish Rice, all oil- and salt-free and available here.

Dessert!
Homemade Raw Vegan Carrot Cake Bites, low-fat and healthy! I haven’t published the recipe just yet, so keep an eye out for it. I will add the link here once I complete it.
The second dessert of the night was my Apple Rose Caramel Tart {hclf raw vegan}. This was my favorite recipe and I actually ended up eating the leftovers for breakfast for the 2 days after my birthday. No, I did not regret that because this was a low fat raw vegan dessert made of nothing but fruit (and love)!
The fruit spread! This actually the present my auntie got for me, but since it’s supposed to be reminiscent of a dessert table, I included it here. She got ideas of fruit cake designs from Pinterest + got me 21 fruits, including Jackfruit, my all time favorite!
Presents!
Of course I have to include presents! I know the typical 21-year-old would ask for some bottles of Grey Goose or Jack Daniels (well, the 21-year-old’s I know, that is), but I honestly asked for nothing but a vegan dinner with the ones I love. My family, of course, still got me some goodies that I know you all will love as well!
- Pure Komachi HD 4 Coated Carbon Stainless Steel Knives with Matching Sheaths (Melon, Citrus, Tomato, and Berry)
- My parents purchased these from Costco (I believe its a few bucks cheaper than Amazon). If you follow me on Instagram, you would have seen me post these a few months back. Well, my parents saw me taking a photo of them and they ended up getting it for me when they visited Costco next. I am so excited for these!! We needed an update on our knife collection, so it was well worth it. Plus, I love that they come with sleeves, that way we can travel with them if we ever have a picnic or something of that sort outdoors. My favorite is the watermelon cause its the cutest!

- Schmidt’s Natural Deodorant – Lavender + Sage and some stickers from Vegan Food Share from Yvonne
- It was such a coincidence that she gave this to me! I was planning to make my own deodorant, and she gifted me one with ingredients almost spot on to the recipe I was going to make. this was perfect, as I was able to sample a natural deodorant before possibly wasting money.  All you have to do is take the scooper and get a small amount of it rub it in between your fingers to soften up a bit, then rub it in. It worked for me during my workouts recently, and I am very pleased so far.

I used to think of my birthday as a “cheat day” where I should dump all of my healthy habits and go crazy for a day (or two). That shouldn’t be the case! This is no longer just a diet to me, it is a lifestyle. The biggest treat I see for myself and my body is health. I know not all people will agree with me, and I know I will get the “live a little” comments I always do from my family, but this is the true epitome of L I V I N G in my opinion. Health and the happiness that has come along with it for me are characteristics I had never experienced before, and are what I now see as the true essence of life. These characteristics will differ amongst the beliefs and lifestyle’s of others, I know, but this is who I am.

It’s basically a box full of memories, kind words, future promises or anything wonderful. Notes are written on the website and can be from many different contributors or just one person.
