The 2014 Sweet Eclectic Thanksgiving Menu!
Cranberry Glaze
A high carb low fat Thanksgiving recipe. It is sweetened with dates and coconut sugar, simple to make and incredibly delicious. Pair it with our Vegan Holiday “Meat” Loaf, your guests will thank you for the party you have provided for their mouths 😉
Garlicky Cauliflower Puree
A must have side dish for your vegan thanksgiving menu this year. Pair it with our Mushroom Gravy and you are set! Fat-free, light, and a much healthier alternative than traditionally made mashed potatoes.
Mushroom Gravy
Mmmm Mmmm Mmmm! That is what I have to say about this. Chef Yvonne Ardestani you never cease to amaze me. Use this to top some Garlicky Cauliflower Purée and voila, you have the perfect side dish for your next Vegan Thanksgiving celebration!
Green Beans with Garlic and Lemon
What’s Thanksgiving without some green beans! Yvonne and I were definitely missing some greens on our 2014 Thanksgiving menu, and what a delicious way to fill that void! These green beans are crisp, a little spicy, and full of flavor. Plus they are easy to make!
Date-Sweetened Candied Sweet Potatoes or Yams
High carb low fat, and free of refined sugar and salt, with an oil-free option! These are SOOO good. I suggest you make 2 servings: one for you, one for your guests.
Creamy Mushroom Rice
Infused brown rice with an assortment of vegetables and herbs topped off with a decadent cream sauce that is free of gluten, oil, salt and soy!
Savory Pumpkin Pie (gluten- and soy-free)
The excitement I feel when I bring a recipe idea to life will never get old. The idea of a Savory Pumpkin Pie that is vegan, gluten- and soy-free seemed too good to be true, but we got it to happen and it was SO GOOD. Not only have Yvonne and I created a new favorite for our personal menus this Thanksgiving holiday, but this is a recipe we want you to try and enjoy with your family!
Virgin Cranberry Pomegranate Cider
Because you need a beverage on your holiday menu, too! The perfect balance of sweet and tart with some cinnamon and orange to bring it all together!
Vegan Quinoa Stuffing (gluten- and oil-free)
A lighter alternative to traditional stuffing with a delicious balance of sweet and savory whole food ingredients + it’s gluten- soy- and oil-free.
Raw Vegan Thanksgiving Stuffing
This recipe blew my mind, it tastes just like the ‘Stove Top’ brand stuffing except healthy and raw! It was love at first bite… <3
Vegan Holiday “Meat” Loaf (gluten- and soy-free)
This dish will fool any meat eaters you have at your holiday dinner this year! The combination of the quinoa, oats, mushrooms and nuts provide this dish with the perfect “meat” loaf texture. Finish it off with your choice of our Cranberry Glaze recipe from this year’s series or a traditional meatloaf glaze.
Sweet Potato Chocolate Mousse Pecan Tart (gf)
Yvonne and I played around with a few recipes from the My Eclectic Kitchen App (available for Apple and Android) as a base, and ended up creating this holiday masterpiece! We definitely needed some chocolate on our menu (it is the holidays, of course), but we still wanted to keep the recipe as healthy as possible. I say we accomplished just that! As Yvonne put it, “When nourishing, healing, whole, plant-based food tastes this delicious, it’s cause for even more celebration!”
Raw Pumpkin Spice Mamey Cheesecake (gluten-free)
