This is what a go-to dinner looks like for me, mixed fruit over a large bed of greens with a fruity dressing 🙂 I do also at times eat a large serving of cooked veggies and rice, but summer has me craving something a bit more fresh!Rainbow Salad Mango Barley Dressing3Rainbow Salad Mango Barley Dressing5This dressing is so good that I even remade it and drank it as a smoothie, really I did. Just add a bit of nut milk and voila, you have breakfast 😉 I prefer macadamia nut milk as thats what I’m currently hooked on, but any non dairy vegan milk will do.   • Organic romaine
  • Organic mizuna from the Hollywood Farmer’s Market -> it was only $1 for a bunch at closing!
  • Organic micro greens from Trader Joe’s: contains organic mizuna, organic tatsoi, organic red mustard, organic purple kohlrabi, organic red cabbage, organic kale, organic broccoli, organic collards, organic celery, organic arugula, organic beet tops, organic amaranth

Rainbow Fruit Salad + Mango Barley Dressing (raw, low-fat)

Ingredients

  • 1 bunch mizuna (also known as water greens)
  • 1 head of romaine lettuce
  • 2 cups mixed microgreens (I used Trader Joe’s)*
  • 1 cup blueberries
  • 1 persian cucumber
  • 1 ataulfo mango
  • 1 tomato
  • 1/2-1 avocado

Dressing

  • 2 ataulfo mangoes
  • 1/2 tbsp barley grass juice powder
  • 1/4 tsp fresh grated ginger
  • Squeeze of orange juice

Instructions

  1. Roughly chop the greens and place into a large bowl.
  2. Cut up the salad ingredients, any way you would like, and arrange onto the greens.
  3. Blend together the dressing ingredients until smooth, and pour over the salad.
  4. Mix until combined and most of the greens are covered, then dig in!

Notes

-Contains organic mizuna, organic tatsoi, organic red mustard, organic purple kohlrabi, organic red cabbage, organic kale, organic broccoli, organic collards, organic celery, organic arugula, organic beet tops, organic amaranth.

-Try to purchase as organic as possible 🙂
