Valentine’s Day is on its way, and I think that the perfect date night would be a relaxed one in making a healthy homemade dinner with your sweetie!
My boyfriend Chris and I collaborated yet again, and put together a healthy, oil-free and easy peasy Vegan Valentine’s Day Menu for you to enjoy. Millet Tabbouleh Hearty Lentil Soup Oil-Free Heart Shaped Falafel Wraps
This has got to be my favorite recipe from our menu. Well, I guess I am a bit biased as I’ve got a sweet tooth & am a chocolate lover. But I mean who wouldn’t love these clean, healthy and easy truffles? Yes, it can be done! Plus we added a surprise inside each bite. Completely optional, but perfect for the occasion 😉

Ingredients
2-Ingredient Base:
- 2 cups pitted medjool dates (about 20 medium)
- 3 tbsp raw cacao powder
Then Add In:
- 1 tbsp raw cacao nibs
- 1/4 tsp cinnamon
- Optional: pinch of cayenne pepper
- Fresh raspberries
Coat In:
- Freeze dried raspberries, ground into powder
- Raw cacao powder
- Raw cacao nibs
- Coconut shreds (I was out)
Instructions
- If your dates are not fresh (soft and gooey), soak them in warm water for 15 minutes and then drain.
- Place all of the ingredients (except for the raspberries and toppings) into a food processor and run until it forms a dough.
- Remove and separate into 1 tbsp sized pieces. Take 2 of those pieces and place them around a raspberry. Roll to seal the pieces together and to form a ball around the raspberry.
- Roll in coating ingredients of your choice.
- Eat as is, or place into the refrigerator for about an hour to firm up.
Notes
Store in an airtight container in your refrigerator for up to 4 days.
