25 Apr Spirulina Beet Wraps (GF, Raw Option)
Wraps and burritos are what I used to live off of in high school. They were the easiest thing to make (if I was lucky enough to find inspiration to make my own lunch as I used to hate cooking!) and they were also always available in my cafeteria.
The wraps and burritos I used to eat, however, we’re not vegan. They actually were the furthest from what I would ever eat now, filled with cheese, sour cream, bacon, meat, salt, and no veggies. I never used to like veggies, at all. I’d only eat them when they were doused with ranch or cream or any dressing that would mask their flavors.
Oh how times have changed, and I am so thankful I have turned to this lifestyle. I am so much more open to trying new things, and I am always working to discover recipes or ingredients that will allow for me to enjoy foods that are reminiscent of what I used to enjoy. These wraps do just that.
These have, of course, no meat, no dairy, and no added salt (except for that already present in the Wrawp). They are almost fully raw, and could be made fully raw with simple minor changes. They can also be customized to your liking, and they are damn delicious. These kick my old wraps and burritos in the butt! They are packed with flavor, tons or vitamins and nutrients, and honestly, how pretty do they look?!
The raw vegan flatbread I used in this recipe is made by a company called Wrawp. This also kicks the butt of the old tortillas I used to use, even if they were whole wheat of gluten free. Wrawps are raw, vegan, organic, gluten free flatbread and they are an independent, Los Angeles based company. I always try to turn to raw foods whenever possible as they always make me feel my best and are in an unaltered, natural and pure state, so these completely parallel that belief. They come in different flavors (Original, Spirulina, Smokey Heaven, Morning Energizer, Asian, Spicy, and their seasonal Persimon Delight), and today I chose the Spirulina Wrap for an extra superfood kick. I also should include that these wraps are extremely sturdy! I have made my own raw wraps in my dehydrator, and at times they have come out too thin and I ended up having to eat them with a fork. These stayed together the whole meal, with the exception of me having to hold the bottom shut to prevent the ingredients from falling out the bottom as I bit through.

Ingredients
- 1 spirulina Wrawp
- 1-2 small beets*
- Shredded carrots
- 1/4 avocado
- Pea Sprouts
- Mixed baby greens (kale, spinach and chard)
- Parsley
Instructions
- Peel and cube beets into about 1/2″ pieces. Season to taste and roast at 350F for 35-40 minutes, or until desired consistency is reached.
- Slice the avocado, and place into wrap, along with the remaining ingredients + any other ingredients you wish to include in your wrap.
- Arrange ingredients in wrap, roll up, and enjoy!
Notes
If creating a completely raw wrap, simply use shredded raw beets and skip the first step.
