Vegan Ceviche

Ingredients
- 14.6 oz. Melissa’s Hearts of Palm, sliced
- 3/4 cup fresh cilantro, chopped
- 3/4 cup bell pepper, diced (I used orange and yellow)
- 2 cups grape tomatoes, halved
- 2 small persian cucumbers, quartered and sliced
- 1/4 cup red onions, diced small
- 2 limes, juiced
- Fresh black pepper
- Salt or healthy green salt substitute
Instructions
- Slice up all of the ingredients and toss them into a bowl.
- Top it with lime juice, fresh black pepper, and salt if you desire.
- I suggest allowing it to chill in the fridge for at least an hour to merry all of the flavors. The longer it sits, the better it will taste!
