Raw Tomato Jalapeño Salad (Oil- & Salt-free)

Ingredients
Dressing
- 1/2 cup tomato, roughly chopped
- 1/2 cup water
- 1/3 cup apple cider vinegar, raw unfiltered
- 1/4 cup lime or lemon juice
- 1-2 tbsp jalapeño, deseeded
- 2 medjool dates
- 2 tbsp sun dried tomato, oil free salt free
- 2 tbsp white onion
- 1 clove garlic
- 1 tbsp ginger, grated
- 1/2 tsp dehydrated celery or 1/2 rib of celery
Salad
- 2 cups mixed greens or romaine lettuce, chopped
- 1/2 cup grape tomatoes
- 1/2 cup sweet mini peppers, sliced
- 1/3 cup organic non-GMO corn
- 2 Persian cucumbers, sliced
- 1/3 cup fresh cilantro
Instructions
Dressing
- Simply add all of the ingredients into a high speed blender or food processor and process until smooth.
Salad
- Prepare and toss all of the salad ingredients into a large bowl and drizzle liberally with dressing.
