Roasted Brussels Sprouts w/ Orange Maple Glaze and Thyme Roasted Cranberries

Brussels Sprouts

  1. Preheat oven to 400 degrees F.
  2. Wash and dry brussels sprouts. Cut off brown ends and and any brown outer leaves, then slice in half. Place onto a large baking sheet.
  3. In a small bowl, mix together the orange juice, zest, and maple syrup. Drizzle evenly over the brussels sprouts.
  4. Top with pepper and salt as desired. Roast for 35 to 40 minutes, until crisp on the outside and tender on the inside.
  5. Remove and cool for 15 minutes before serving.

Cranberries

  1. Wash and dry 2 cups of cranberries and toss them with coconut palm sugar and fresh thyme.
  2. Evenly distribute on a baking dish and place into the oven at 400F for 15-20 minutes.
