Raw Green Juice Mojito

Green Juice MojitoThis Sweet Raw Green Juice Mojito was actually what I contributed to my family’s Easter celebration this year. They loved it, so I decided I would share it with you all here (this explains my ears in the photo, haha!).Green Juice Mojito32For any of you who are interested, I use the Omega VRT350 Juicer. It is a masticating slow juicer, and I love it as it draws out more juice from leafy greens, is a lot quieter than my old centrifugal juicer, and the juice can last up to 3 days sealed in the refrigerator (although it is of course optimal to drink it asap). I have had much success with mine over the last 2 years and highly recommend it 🙂

For a list of all of the appliances I use, check out my post here.Green Juice Mojito 1Green Juice Mojito67Use any greens of choice, turning first to what you have on hand! I had lots of spinach in my fridge, so that is what I went for. Also, spinach is one of the mildest greens you can use in juices and smoothies, and since I was serving this to a crowd that I really wanted to please (and who aren’t veggie lovers like me), I thought it was the best choice.Green Juice Mojito58Make sure you tag me on Instagram @sweetsimplevegan or twitter @sweetsimpleveg and hashtag #sweetsimplevegan if you recreate any of my recipes, I love to see your photos!
