Coconut Creamed Corn {oil-free} / Vegan Thanksgiving

Ingredients
- ¼ cup sweet onion, diced
- 2 cloves garlic, minced
- 1 chopped scallions
- 3 tbs water for cooking
- 2 cups frozen organic non GMO corn kernels
- 1 cup full fat coconut milk
- 2 Tablespoons coconut sugar
- Handful flat-leaf parsley, chopped
- 2 Tablespoons gluten free flour blend of your choice
- 1/4 teaspoon sea salt, or to taste
- Freshly ground black pepper, adjust to taste
- 1/8 teaspoon cayenne pepper (optional)
Instructions
- Saute sweet onion and garlic in water until translucent.
- Add corn and cook on medium heat for 8-10 minutes or until it caramelizes with the onions and garlic.
- Add in the remaining ingredients, stir until uniform, and cook for 2 more minutes. Adjust seasonings to taste.
