This morning, as all other mornings, I couldn’t decide what to make for breakfast for my boyfriend and I. What I had in mind was either banana ice cream or zucchini oats {zoats}. I texted Chris as I was leaving the gym to see what he would like for breakfast, to see if he could offer another option. His response? Banana ice cream or zucchini oats {zoats}…

Together these two recipes are a slam dunk! A mix of warm oats with the cold banana ice cream is wonderful. When the ice cream melts and it is all mixed together, you get a bowl of, dare I say it…magic.

Warm Zucchini & Millet Oats + Acai Banana Ice Cream {hclf, oil-free}

Ingredients

Acai Banana Ice Cream

  • 2 frozen bananas
  • 2 packs frozen acai

Zucchini Millet Oats {Zoats}

  • 3/4 cup gf oats
  • 1/4 cup millet
  • 1/3 medium zucchini, shredded
  • 2 cups water
  • 1/2 tbs maple syrup
  • 1/4 tsp cinnamon
  • 1/8 tsp vanilla bean powder
  • Stevia as needed

Instructions

Acai Banana Ice Cream

  1. Break into pieces and run in a food processor until fluffy.

Zucchini & Millet Oats

  1. Bring the oats, millet, zucchini and cinnamon to a boil over medium in the water, then simmer until cooked and thick.
  2. Add in the remaining ingredients and stir.

Assembly

  1. Divide zoats into 2 bowls and top both with desired ice cream.
  2. Add in toppings of choice, such as fresh fruit, seeds, and/or nut butter.
