Date-Sweetened Caramel Apples {oil- gluten- & refined sugar-free w/ raw option}

Ingredients
- 16 ounces soft medjool dates, pitted (if not soft, soak in warm water for 15 minutes then drain)
- 1/4 cup plant milk (I used coconut)
- 1 tbsp vanilla extract
- 1/2 tsp pumpkin pie spice
- 1/8-1/4 tsp salt
- Apples of choice
- Toppings of choice (I used crushed walnuts)
- 1 bag 6″ cookie sticks
Instructions
- Blend all of the ingredients except for the apples in a high speed blender until smooth, scraping down the sides if needed.
- Prepare your desired toppings so they are ready to press onto the apples.
- Use a spoon or butter knife to spread a thick later of caramel all around the apple.
- Press (do not turn) apple onto desired toppings.
- Place in the refrigerator for 20-25 minutes to stiffen.
