Easy 1 Pot Split Pea Soup w/ Bagel Croutons

- 2 quarts water or vegetable broth
- 1 cup celery diced
- 1 cup carrots diced
- 4 oz. mushrooms, sliced
- 1/2 cup white onions, chopped
- 2 cloves garlic, minced
- 2 cups green split peas
- 2 bay leaves
- 1-2 teaspoons salt (as desired)
- 1/2 tsp black pepper (or to taste)
Bagel Croutons
Instructions
- Sort and rinse split peas prior to cooking.
- In a large pot over medium heat, add 1/4 cup vegetable broth, onions, garlic, carrots, celery and mushrooms.
- Add in split peas, and cover with the remaining water or vegetable broth. Bring to a boil, cover, reduce heat to simmer for 1 1/2 hours.
- Season with salt and pepper to taste the serve with bagel croutons.
Bagel Croutons
- Preheat oven to 350 F and line a large baking sheet with parchment paper.
- Place you bagel cubes on the lined baking sheet and bake for 10-15 minutes, or until browned and crunchy.
