  1. Mix all ingredients in a blender until smooth, set aside

Buddha Bowls

  1. In a non-stick pan on medium heat, cook tofu until brown and slightly crispy, seasoning with salt and pepper to taste, about 10-15 minutes. Set aside.
  2. Meanwhile, on a cast iron skillet on medium high heat, grill bok choy until charred, about 5-6 minutes per side. Set aside.
  3. Assemble bowls first with rice, then veggies and tofu.
  4. Sprinkle avocado slices with sesame seeds and garnish with green onion.
  5. Drizzle with spicy peanut sauce, and enjoy!
