jasmine headshotI initially made the decision to adopt a plant-based lifestyle on a whim. I was a freshman in college who had never once before been exposed to veganism, not even knowing what the term was defined to be. The ‘Vegan Corner’ in my cafeteria is what sparked my curiosity. I was studying veterinary medicine at the time (my major has since changed), but I felt it to be ironic that I claimed to be concerned with the health and well being of animals, yet did not live an ethical lifestyle. I challenged myself to take on a vegan lifestyle for the 40 days of lent, but the 40 days ended up turning into something that would last a lifetime.

I also, unfortunately, was struggling with disordered eating, which influenced by decision to dedicate my life to health (Read my full story here). My decision was initially skewed by the opinions of my friend and family at the time, but I did not give up on it, and with proper research and with the growth of my knowledge of a plant-based diet, along with my personal experiences, I learned that a plant-based diet is the only way that I would want to ever live. With that being said, I felt it was only necessary to share my experience, and inspire others to consider taking on this beautiful lifestyle. What I hope to do with my website is inspire others to consider a plant-based lifestyle through my simple vegan recipes. Most of my recipes contain ingredients that are available to almost all people, and have easy steps to follow.

I do understand that going completely vegan is hard, as breaking a lifelong habit of something as intrinsic as diet is always troubling, but I always say that everyone has to start somewhere, and no one will start at the same place. Add at least 1 more piece of fruit, one more serving of vegetables, or even one full vegan meal into your days. 1 piece of fruit is better having no fruit, right? Eventually, you will be wanting more, I promise. I am focused on just making any impact that I can on the lives of others and hopefully inspire them to take charge of their health.

I debated whether or not to post this, as I am embarrassed by the photo on the left, but I am also extremely proud of the improvements I have made and level of health I have attained. I know it might not be a drastic transformation in a outward appearance, but looking at this reminds me of how far I have come. The photo on the left was me in 2011 on a standard American diet, the photo on the right is me now almost 3 years vegan 2014. The elimination of large amounts of caffeine, junk and fast foods, poor sleeping + a negative view of myself and my body has brought me towards the level of health and happiness I am at today. Improved skin (all over), healthier hair, improved digestion, or pollution and disrespect of my body. It’s amazing how much my mood has improved, and how much my priorities have shifted. Never would I have imagined myself to go vegan and let go of things like In-n-out and Hot Cheetos, but here I am! I have gone through a lot of rough times to get here, but I am happy and grateful of where I am at today and I hope to inspire you all to do the same just as I was inspired by people like @fullyrawkristina @freeleethebananagirl.
