If you haven't already check it out, last month we shared a Loaded Vegan Chickpea Omelette recipe that you will DEFINITELY want to try out if you love these nachos.
This recipe is part of a vegan brinner collaboration. What is brinner? Well that is a great question, I had to think twice about that myself haha. Brinner = breakfast for dinner and it is something that I have enjoyed my whole life but didn't have a name for. It just makes breakfast foods and dinner that much more enjoyable.

Roasted Kabocha Squash Granola & Yogurt Breakfast Bowls sweetsimplevegan.comOn Monday I released one of favorite posts yet-- How To Roast Kabocha Squash. I know it was a fairly simple post and not much of a recipe, but not only is it one of my absolute favorite foods, it is also one people misconceive as difficult to cook/eat. Today I am going to share with you all a winning combo that I discovered after my recent kabocha squash obsession, a kabocha squash breakfast bowl filled with yogurt, granola, and a touch of maple syrup. If you don't have kabocha squash accessible to you, acorn squash and butternut also go well with this combo! How To Roast Kabocha Squash sweetsimplevegan.comIf you need a hand figuring out just how to prepare kabocha squash, click the image above to visit my previous blog post to help you out :)

Valentine’s Day Pink Pitaya Waffles {vegan + gluten & oil-free} sweetsimplevegan.comI created for you all a Valentine's Day Pink Pitaya Waffle recipe that you all are going to LOVE -- not just cause they are delicious, but come on, how cute are they? AND not only is this perfect for the holiday, it is perfect for kids, too! As some of you may know from my Instagram and YouTube, I have recently had a problem with my external hard drive. Well, I should say currently, because the issue is it yet resolved :/

Anyways, I am telling you this because this Pink Pitaya Waffle recipe would not have been born had that not happened. Two weeks ago I shot an oil free fudge recipe to be shared today in time for Valentine's Day (it will still be released at some point, I promise), and I was so pumped to do so. Since the files from that shoot and video are not accessible at the moment, I decided to create another recipe for you because with the and possibility that I recover my data (crossing my fingers and toes), why not cook up a brand new recipe?

So everything happens for a reason right? Scratch that. Everything happens for waffles, right?
