Easy Vegan Meals For Your Busy Week {Oil-Free Breakfast, Lunch & Dinner} sweetsimplevegan.comWhat's up, how are you doing today? :) I feel like I don't ask you that as often as I should, especially since I always tell you how I am feeling, and am about to again right now... As a full time nutritional science student & blogger, let's just say that my weeks get pretty insane. I'm actually sitting here at a coffee shop in Hollywood, waiting for class to start. Doesn't sound so hectic, but let me explain: I volunteer for a food service course I am taking, at 8:00am certain days of the week, and Chris was nice enough to drive me out to the site, pick me up after my shift, then head to a coffee shop to blog and burn time before class, then take me to class. I would drive myself, but parking is impossible on my campus in the afternoons! It doesn't make sense for me to go home and then back out to class because I am already out in this direction for volunteering, so mornings are kind of a burden! I am off to class until 4:30pm :/ Aaaalright, enough of the pity party, but I kind of just wanted to get the frustration of my morning off of my chest.... So as you can see, I am constantly on the go, and because of this always looking for easy, healthy & oil-free recipes to get me through the school week, and to keep me from getting bored of the usual rice, potatoes and oats. Don't get me wrong, starch is where it's at and I enjoying all of these foods, but when I eat these constantly, I run out of ideas for recipes and different seasonings, and I just do not feel like thinking of new ways to enjoy them because I don't even have time to think about school, blogging, life, ah!! I turned to the Finding Vegan Bloggers Facebook group and decided to submit a request for Easy Vegan Meals For Your Busy Week {Oil-Free Breakfast, Lunch & Dinner}, and not only keep them bookmarked for myself, but share them here are well so you all can make use of these. I visited the LA wholesale produce market about two weeks ago (you can see my full haul here), and I had found myself with a lot of ripe bananas that I needed to use up, and FAST. I froze a good chunk of what I had, but I wanted to also try and utilize them in various ways so I wasn't stuck with banana smoothies and banana ice creams all day. I decided I would create a comforting recipe, especially for those experiencing the colder weather during this brutal winter! There's nothing quite like a warm slice of sweet bread with a glass of almond milk to keep cozy, and if you haven't yet tried this, I promise you will love it. After making my Date-Sweetened Banana Bread (Gluten- & Oil-Free) and seeing just how much my family enjoyed it (it was gone in less than a day, I had to hide my second batch just so I could photograph it!), I wanted to create a similar recipe...but take it even further. 

During the holiday season, my two friends Amanda and Loe came over for a girl's brunch, so I decided to show you all what we put together and also the gifts I put together for them to give you ideas for your loved ones, or yourself ;) What I wanted to do is put together gift baskets that were practical and useful to them both, consisting of healthy vegan treats! I also included square bars, as I did not have an oil-free option on hand, but scroll down below and I share 2 I think you should check out <3Here is the full brunch spread that we had, all of it is summarized below the video :) It is always comforting to be around people who hold the same outlook and ideals as you, especially in the vegan community. Loe and Amanda and I all have similar tastes in food, and we put together a spread that each and every one of us loved.

Healthy 3-Ingredient Vegan Pancakes {gluten- & oil-free} sweetsimplevegan.comAn easy, no-fuss recipe that is filling, comforting, and does not skimp on flavor one bit. I was actually very surprised by how fluffy these pancakes turned out to be, considering I did not use any baking soda. I have been seeing oat-banana-nut-milk pancakes all over Instagram and I finally had to try my hand at it + the fancy food styling that always comes along with it as well ;) The day I made these in the kitchen was also a day where Chris and I worked on 2 other recipes, his Epic Thanksgiving Leftovers Pizza and his Easy to Make Potato Leek Soup in Sourdough Bread Bowls as shown in the recipe video I put together for this (below). My favorite out of them had to be his bread bowl soup ;P

Warm Zucchini Millet Oats + Acai Banana Ice Cream Breakfast {hclf, oil-free} sweetsimplevegan.com This morning, as all other mornings, I couldn't decide what to make for breakfast for my boyfriend and I. What I had in mind was either banana ice cream or zucchini oats {zoats}. I texted Chris as I was leaving the gym to see what he would like for breakfast, to see if he could offer another option. His response? Banana ice cream or zucchini oats {zoats}... What to do?! Well, I decided to go home and make a little bit of both :)????????
