Raw Vegan

Healthy Carrot Cake Bites (raw, low fat, gf) A healthy and delicious raw vegan carrot cake that is low in fat, gluten-free, and filled with nothing but the good stuff. Yes, you can have your cake AND eat it too AND feel amazing afterwords. You don't have to worry about any more of that  "detoxing" nonsense after a long birthday weekend. A Healthy Vegan 21st Birthday Celebration: Apple Rose Caramel Tart (Raw) For my birthday this year, I made two low fat raw vegan desserts for my family and I to enjoy. The first was my Apple Rose Caramel Tart (above) and the second was these Carrot Cake Bites. You can read more about my birthday on my last post, including all of delicious meals I had, the cute vegan presents I received, and the amazing all fruit cake my aunt made me.

Vegan Chipotle Cauliflower Buffalo Bites + Raw Cashew Ranch Dip (gf) The 2014 Football Season is here, and what better way to kick it off than with some spicy, saucy, "I need 20 napkins" buffalo bites? Oh, and they're...drumroll...healthy too. Wait....don't go! Stay for this, I know you'll love them. Cheezy burger spreads, pizza crust, oven-roasted steaks, and now buffalo wings, I think it's safe to say that with Cauliflower, you can do it all. Cauliflower is one of my favorite ingredients to use because it is so versatile and has a power punch of nutrition. It's my go-to vegetable when I try to create a recipes with hidden vegetables for my family to try. Vegan Chipotle Cauliflower Buffalo Bites + Raw Cashew Ranch Dip (gf)

Raw Vegan Fruit Beer Ice Cream Floats! Root Beer and Coca Cola ice cream floats were where it was at when growing up. I used to attend a day care program after school and we had ice cream floats almost every Friday. I used to think it was the best thing ever...until I had this. Having had learned of the {horrible} effects soda could have on our bodies, I vowed to never again have one. But, when they are served around me, I can't lie...I do tend to miss the floats quite a bit! Especially because I start to reminisce on my childhood. So in order to fullfill these cravings, what is there to do? What there always is to do in cases like this, veganize it. That term has been frequent for the past 3 years of my life, and forever will be. I love being able to veganize old favorites of mine. Not only do I have fun experimenting in the kitchen, but I love sharing my recipes with my family in hopes of bringing them one step closer to considering a plant-based diet. Without further or do, I present to you my RAW and VEGAN Fruit Beer Float xx

Apple Rose Caramel Tart (Raw)Raw. Vegan. Apple. Caramel. Tart. Are you ready for this? Fresh baked apple tart with warming spices and a big ol' dallop of vanilla ice cream...I know you know what I am talking about....and I know you know you loved it growing up. My mom used to make the absolute best apple tart. We had an apple peeler and corer (and still do) that would core, peel and thinly slice the apple at the same time. When I was younger I thought it was the best tool to ever have been invented in mankind. Anyways...back to the story of this apple tart.

Raw Chocolate & Coconut Vanilla Ice CreamI can never get over how creamy and dreamy banana 'nice' cream is. Its seriously so much better than any of that Dreyer's I used to eat (rock hard sometimes) as a kid. I love to use this dish to encourage people to consider veganism, or simply increasing the amount of plant-foods into their diet. Banana nice cream has never been a miss in my kitchen, and I encourage you to try it for this reason! Make it for yourself or make it for you to share with a loved one (you'll have to make 2 servings....maybe three..don't say I didn't warn you). There are two main reasons why I am told a high raw, or even a vegan diet in general, does not work for everyone. I am here to tell you why I think that these reasons are not valid, and are often just misunderstandings and misjudgments.

Mint Matcha Coconut Cooler

This summer in LA has been unbearably hot most days. I feel like I always say this, but summer seems to be getting hotter each year. This is actually probably true, and I have been told it is caused by global warming and the destruction of our atmosphere, but I don't really want to get into that here. Besides, this drink is what you're here for, right?

I was given the opportunity to try out the Kiss Me Organics Matcha last week, and I came up with this as my taste testing recipe! I tried the matcha alone, but I am not a matcha expert and honestly could not judge it based upon that tasting. So into a recipe it went!

This organic matcha is very fresh and has a naturally strong aroma to it. Don't be frightened - that's how all the antioxidants say hello!

I was inspired by my favorite Moroccan Mint Latte from Urth Caffe. For those if you in California, I definitely recommend you try it out when you're by an Urth Caffe! They have them all around LA and in Berkeley as well (which is where I first tried it). I wanted to recreate the drink in my kitchen, but in a more weather-friendly form. The drink is warm, but I wanted something cool. I originally was going to just make  an iced latte with coconut milk, but I also wanted to decrease the fat without compromising nutrient density AND flavor, so I went with fresh young thai coconut water.
