Chocolate Sweet Potato Almond Pulp Cookies {oil- gluten- & refined-sugar free} sweetsimplevegan.com #almondpulp #cookies #almondcookies #vegan #glutenfreeMy mom has recently become obsessed, and I mean OBSESSED with making her own nut milk. It's a honestly the cutest thing ever and I am so grateful she is doing so because it is SO GOOD. The only problem is that with this almond milk craze comes almond pulp...what the heck do we do with it all? Wait, what is almond pulp? It is what results from making almond milk, the by-product from making nut milk that is leftover in the nut milk bag after straining.Chocolate Sweet Potato Almond Pulp Cookies {oil- gluten- & refined-sugar free} sweetsimplevegan.com #almondpulp #cookies #almondcookies #vegan #glutenfree

Emily von Euw has been one of the biggest inspirations to me here in the 'blogger world'. Her website, This Rawsome Vegan Life, never ceases to disappoint. All of her recipes are accompanied with mouth watering photos, and most are raw vegan. Emily has shown me, and hopefully will show the rest of you, that veganism is not bland or complicated or unappealing as most may assume it to be, but rather, it is fun, delicious, color filled, and one of the best decisions you can make for yourself in your lifetime. Emily is so positive in her writing on her posts on both her website and Instagram, and I always look forward to the weekly emails I receive. So, without further or do, I introduce to you Emily von Euw.

Raw Chocolate Cream Caramel Bars

My parents named me Emily von Euw, and I have been hanging around this planet for about 20 years plus a few months. I reside in Vancouver, Canada with my family, friends, lover and approximately 1 million other people I don't know personally.

I adore being alive. I also adore avocados. I've always defined myself as a critical thinker, and part of being a critical thinker is hyper-analyzing everything that surrounds me (which, in this modernist world, is quite a lot). Being in my brain is overwhelming much of the time but I have learned to manage being me by treating myself with respect (this includes meditating regularly, getting outdoors whenever possible, and feeding my body and mind whole, nourishing, organic foods). I think while we are here for these some odd 80 years most of us get on average, we should make those happy years. Ultimately, who really know if anything matters? So let's just have a good time while we can, and not tell other people how to live their lives.

I like to dance, laugh, eat, drink, eat some more, always learn, always try to improve myself, do anything that gives me a natural dopamine rush (all of the things just mentioned, plus sex, exercise, hiking, cuddling other animals, and looking into the eyes of people I love). I study history at university (getting my bachelors now, plan on getting my masters later) and I am also a full-time food blogger! What the heck does that mean? Well, it means I spend a lot of time making raw vegan recipes, taking food porn pictures of them, then sharing it all on the world wide web.

My blog is called This Rawsome Vegan Life.

Vegan Almond Pulp Fudge Brownies (gf)After you have made your beloved nut milks, what do you do with the pulp? Make brownies, of course! Homemade raw nut milks have been my thang recently, all thanks to Raw nut Milk. My two favorites are definitely my Ice Cream Milk and my Pumpkin Pecan Milk, mmmmm. 3Vegan Almond Pulp Fudge Brownies (gf).JPGOf course, the ingredient sources will be up to you, but I wanted to share my favorites:

1Baked Chocolate Kale ChipsYES, this happened. The thought of chocolate being paired with kale kind of blew my mind. Initially, I just said why? But the pairing sparked  my curiosity...I had to have it. If it involves kale, I'M IN! If you aren't fond of kale, or if your kiddies who refuse to eat their greens, these are a great way to eat your kale! Sweet, crunchy, and rich deep dark chocolate flavor.

kaleNutritional Content of Kale:

Kale is full of essential vitamins A, C and K as well as minerals like copper, potassium, iron, manganese and phosphorus. 1 cup of kale has only about 40 calories AND it packs almost 3 grams of protein!

Benefits of kale:

  • Detoxification and Weight loss
  • Strengthens Your Immune System
  • Healthier Hair, Skin & Nails
  • Helps prevent optical disorders and helps store vitamins in the retina
  • Anti-inflammatory
  • Prevents various cancers such as colon, prostate and ovarian.

Pesto Kale Chips -- sweetsimplevegan.comI finally got around to making pesto kale chips! After my family and I had a pizza night, we were left with extra pesto to use up. I have been making this pesto so often that I almost just opted to throwing it out. My mom, being a mom, took it and stuck in the freezer instead (thank you mom, this recipe would not be here without you!). So one day, when scouring through the freezer for some frozen fruit for an afternoon snack smoothie, I found a jar filled with something green. I had no idea what it was and to my pleasant surprise it was the pesto that was left over from pizza night. This gave me an idea to make a new snack that I had never made before, and these chips were born! Pesto Kale Chips -- sweetsimplevegan.comI grabbed some kale from the garden, washed it, removed the stems and tore it into medium sized pieces. I dumped the pesto over it and massaged massaged massaged until the kale was soft and the pesto was well incorporated. I pre-heated the oven, lined my baking sheets, and baked the kale until crispy. This was actually the first time I have ever made kale chips with oil and salt. I know it may be shocking to most as kale chips traditionally use oil to make them light and crispy, but think again! I have made numerous flavors of kale chips without oil and I usually use my green salt in place of normal salt. One of my favorites is my Spicy Cheezy Kale Chips, which was actually the first recipe I ever posted on my blog. Let me tell you that salt or no salt, oil or no oil, all the homemade healthy kale chips you will make will turn out equally as delicious.
