My favorite item at Sunday brunch growing up -- french toast! Not only does this recipe no longer require eggs, it does not have to be fried, either. Want to know my secret to the PERFECT low fat vegan french toast? BANANAS! This past weekend, Chris and I took an impromptu trip to Big Bear, CA to spend the Fourth of July weekend with my family and enjoy the festivities held at the lake. My mom surprised us with homemade bread on Saturday morning and Chris had a brilliant idea -- let's make french toast!

It's to me like sitting in front of a warm fire on a cold winter's night (if you would even consider there to be a 'winter' here in LA). The problem with most other banana bread recipes is that they contain dairy, eggs, refined sugar, and oil -- things that I do not consume or include in what I consider a healthy diet. So, I decided not only to veganize this nostalgic recipe, but to also be sure it is a healthy version that I could guiltlessly consume and enjoy. So here it is, a healthy banana bread that is vegan, gluten-free, refined sugar-free, oil-free and yet still comforting & delicious. The ingredient list on this recipe is also relatively simple, I promise!

I made it again for lunch so that I could share it with all of you ;) This recipe only requires a few ingredients, and is actually good for you, as opposed to the dairy, fat-filled, cruelty-filled ice cream at the supermarket. I listed this recipe as a dessert, but it is high carb, low fat, and mostly raw, so I say eat this whenever the heck you want.
