Date-Sweetened Pumpkin Cream Cheese Bread (oil-, gluten- & refined sugar-free) sweetsimplevegan.com Moist, creamy, pumpkin-y AND still healthy AF ;) Yuppp, another bread recipe for you guys because you seem to love baked goodies as much as I do ;) I decided to veganize AND health-ify a classic recipe I see every fall, and I am so so pleased with the outcome. Not only is this bread moist, but it is perfectly sweet + creamy from the cream cheese! Adding cream cheese, nut butters, etc. is common practice for a lot of people when enjoying bread, so why not have the two already married into one? ❤️

After Chris had moved to LA in October, we had discussed making homemade veggie burgers for our blogs, all thanks to an at home dinner we had with Hillary Eats Well Hemp & Greens Burgers we had found at our local Whole Foods Market. This burger tastes like Stove Top Stuffing to me, something that I grew up eating, and recently created a vegan substitute for! I loved the herb and spice mixture of the patty, but what I did not enjoy was the amount of oil in the ingredients. I was determined to create an oil-free version of these with my own personal touch, and that is exactly what I did. Plus, #Novemburger is in full effect, so celebrate with a fun veggie burger recipe...or two, a bonus one is featured below ;) Chris and I aren't sure if that is even a thing, but with this, we will make it happen!

GF Sourdough Stuffing YSJ Vegan Thanksgiving99What's Thanksgiving dinner without a hearty serving of stuffing? Growing up, I used to LOVE my mom's stuffing, I thought she was the most talented chef in the kitchen based on this one dish, as she would deliver every year, and the flavor would always be spot on. Once I grew up, my mom shared her secret recipe with me when I aided her in Thanksgiving prep....Stove Top Stuffing...uhhh, I'll pass!GF Sourdough Stuffing YSJ Vegan Thanksgiving88Once going vegan, and shifting away from processed, prepackaged foods, I needed to find myself a replacement for this family 'tradition' we used to share. I also wanted to challenge myself and try for a gluten-free recipe as well.

BananaBreadThere's always a sense of comfort that comes along with enjoying thick a slice of banana bread and a tall glass of {non-dairy} milk. It's to me like sitting in front of a warm fire on a cold winter's night (if you would even consider there to be a 'winter' here in LA). The problem with most other banana bread recipes is that they contain dairy, eggs, refined sugar, and oil -- things that I do not consume or include in what I consider a healthy diet. So, I decided not only to veganize this nostalgic recipe, but to also be sure it is a healthy version that I could guiltlessly consume and enjoy. So here it is, a healthy banana bread that is vegan, gluten-free, refined sugar-free, oil-free and yet still comforting & delicious. The ingredient list on this recipe is also relatively simple, I promise!

One Bowl Vegan Holiday Fruit Bread (gluten- and refined sugar-free)Every year for Christmas, someway or another, my family ends up with a boxed Fruit Cake. Have you ever tried these? If you haven't, I'd advise you to pass on it and try this Holiday Fruit Bread instead. Not only is this recipe easier than the traditional recipe, it is also gluten-free, refined sugar-free and delicious. One Bowl Vegan Holiday Fruit Bread (gluten- and refined sugar-free)

Leftover Lentil Sandwich Bread + Avocado ToastLeftover Lentil Sandwich Bread + Avocado Toast The other day when my mom and I were making my Quinoa, Lentil and Arugula Salad together, we got a little carried away in our conversation and we forgot about our red lentils cooking on the stove. If any of you have ever cooked red lentils, you will know that they will turn into mush if overcooked. We were going to make the salad with red lentils for the first time but, well, that didn't happen. Leftover Lentil Sandwich Bread + Avocado Toast
