Vegan Gluten-Free Nectarine & Peach Cobbler + The Best Raw Vanilla Ice Cream This is the Best Raw Vegan Vanilla Ice Cream I have ever tasted. A bold statement, yes. The truth? ABSOLUTELY. This is the ice cream that I used as a base for my Raw Vegan Mango, and you can definitely use it as a base for practically any other flavor you wish to create. For this recipe, a sweet and simple vanilla ice cream was perfect to go with the flavors of the cobbler. (Oh, I used the raw oat crumble as well, included in that same post!) Vegan Gluten-Free Nectarine & Peach Cobbler + The Best Raw Vanilla Ice Cream Feast your eyes on this beautiful pre-oven cobbler! Be sure that after you place all of the stone fruit into the batter, pour the remaining juices and sugar over it, that way you get all of the sweet fruity goodness.

Raw Mango Ice Cream + Homemade Pineapple Flowers4 At the start of summer, my family from Ecuador came to visit and we had an outdoor barbecue to celebrate their arrival. Catching up, sharing all kinds of crazy and hilarious stories and just enjoying the company of one another, I always appreciate those nights. We made grilled vegetable salads that were the bomb.com and I also made dessert, this Raw Vegan Mango Ice Cream with Oat Crumble + Homemade Pineapple Flowers. This dessert was inspired by my weekend at Matthew Kenney Culinary, where I learned how to make the absolute best raw vegan vanilla ice cream and oat crumble that I've ever had. After making it at home a few times, and tweaking the ingredients a bit since I didn't have them all and don't use agave, my mom suggested I take this vanilla ice cream recipe and use it to try and recreate her famous Mango Ice Cream that my family loves.

Below I have shared with you celebration and/or present ideas either for your birthday or for that of a loved on in your life. I hope I inspire you in any which way I can to consider this lifestyle and to choose H E A L T H everyday. A Healthy Vegan 21st Birthday Celebration: Raw Apple 'Oatmeal' and Banana Nice CreamI started my birthday with a beautiful bowl of {raw} fig newton apple cinnamon 'oatmeal' with cinnamon vanilla nice cream + a few gifts I received in the mail. It was just like eating dessert for breakfast, but completely guilt-free! All you have to do is pulse apples, figs, dates and spices in a food processor until a desired consistency is reached, then top it with banana ice cream spiced up with cinnamon and vanilla extract.

Raw Chocolate & Coconut Vanilla Ice CreamI can never get over how creamy and dreamy banana 'nice' cream is. Its seriously so much better than any of that Dreyer's I used to eat (rock hard sometimes) as a kid. I love to use this dish to encourage people to consider veganism, or simply increasing the amount of plant-foods into their diet. Banana nice cream has never been a miss in my kitchen, and I encourage you to try it for this reason! Make it for yourself or make it for you to share with a loved one (you'll have to make 2 servings....maybe three..don't say I didn't warn you). There are two main reasons why I am told a high raw, or even a vegan diet in general, does not work for everyone. I am here to tell you why I think that these reasons are not valid, and are often just misunderstandings and misjudgments.
