Roasted Kabocha Squash Granola & Yogurt Breakfast Bowls sweetsimplevegan.comOn Monday I released one of favorite posts yet-- How To Roast Kabocha Squash. I know it was a fairly simple post and not much of a recipe, but not only is it one of my absolute favorite foods, it is also one people misconceive as difficult to cook/eat. Today I am going to share with you all a winning combo that I discovered after my recent kabocha squash obsession, a kabocha squash breakfast bowl filled with yogurt, granola, and a touch of maple syrup. If you don't have kabocha squash accessible to you, acorn squash and butternut also go well with this combo!How To Roast Kabocha Squash sweetsimplevegan.comIf you need a hand figuring out just how to prepare kabocha squash, click the image above to visit my previous blog post to help you out :)

Easy Crunchy Granola {gluten- & oil-free} | sweetsimplevegan.comCrunchy, chunky AND oil-free? Could this be true? I needed to find an easy go-to granola recipe that I could start making weekly for my home, as I started making smoothie bowls almost daily that the temperature has shot up here in LA! My combos vary based on what I have in the kitchen, but I got my hands on some frozen pitaya packs, and a frequent recipe lately has been this Cacao Pitaya Protein Smoothie Bowl (below), and you can find that full recipe here.

Curried Sweet Potato Soup w/ Kale & Savory Granola {gf}Winter is approaching, and although that doesn't mean much in LA, I know a lot of you in colder climates will dig this recipe for that cozy feel you crave when you're stuck indoors! My boyfriend Chris recently moved here from New Jersey, and I thought that it was hilarious that I was complaining of not being able to wear shorts to school this morning in 60F weather, and he was telling me it was like summer for him! Well, I guess this soup is more for me than him right now in this LA weather, but I could honestly go for some soup any time of the year, and with this recipe, well so could you ;)Curried Sweet Potato Soup w/ Kale & Savory Granola {gf}

'Cheesy' Balsamic Savory Granola with Watermelon Seeds & Sun Dried Tomatoes (gluten-free)I decided to change things up a bit and try my hand a savory snack. When I want to nibble on something throughout the day, savory treats are sometimes necessary, but not as often available to to me unless I dig into veggies or something like avocado toast. I wanted to create a quick grab a handful and go type of snack and this was a winner! Not only is this great for snacks but it also pairs well with salads, soups, {especially my Curried Sweet Potato Soup}, raw vegan pastas + more! And this recipe came together a lot easier than I had expected. I kind of just winged it with all of the herbs and spices, I felt pretty bad ass that the flavor profile was on point I'm not going to lie.'Cheesy' Balsamic Savory Granola with Watermelon Seeds & Sun Dried Tomatoes (gluten-free)
