Why? Well, there are various reasons! Potatoes, even when organic from my local Whole Foods market, are cheap! They are simple to cook, absolutely delicious, and healthy without any needed oils or fats added. Mastering the craft of crispy oil-free potatoes was a challenge for me, but after playing around with a few techniques, and trying out various recipes I had found online, I done did it ;) And my oil-free crispy potatoes are perfection. This recipe is a part of my Healthy Oil-Free Vegan Christmas Menu from my 2015 dinner with my boyfriend Chris. We worked together in the kitchen to put together a few dishes to share with you all here on our blogs, to give you some inspiration and ideas for easy recipes you can try out during your next {holiday} gathering or dinner party.

 Dare I say this is the BEST vegan creamed corn? I have reason to make such a statement, I couldn't believe how good this turned out. There are a TON of vegan creamed corn recipes online that use coconut milk, and that always threw me off. What I wanted out of this creamed corn recipe was a replication of the one my mother used to make, that was unfortunately ladened with animal products {milk, heavy cream and butter}. What I have been trying to do over the last few years is veganize as many of my mothers traditional recipes that I can, and creamed corn has been a big challenge for me. I assumed that the coconut would compromise the flavor, so I never gave it a shot. I also I didn't know if it would live up to the same appeal of the other to my family. I also wanted to challenge myself and try for a gluten-free recipe as well.

Halloween Oreo Cat Cupcakes26Cupcakes + cats? Count me in. I grew up with oreo cupcake cats every halloween, it was our Briones family holiday tradition. So much so that everyone at school would expect it at our yearly celebrations, and boy did we make sure to always deliver ;) The source of this recipe? A good old Nabisco Oreo Box from when I was about 2 years old. Really, this started about 20 years ago, it's really hard to believe. Unfortunately, we misplaced the original recipe cutout that my mom had saved all of these years, but the memory is so vivid in my mind that it was no longer needed to recreate this treat. The original recipe used a prepackaged frosting and cupcake mix, artificial orange stuffed oreos, candy corn, licorice, jelly beans and, well, very unhealthy ingredients. But you guys know me, I had to healthy this up before sharing.
