How to Make Unicorn Sushi Donuts {recipe + video} sweetsimplevegan.com #unicorn #sushi #sushidonuts #vegan #oilfree #colorfulI'm sure by now you have all seen the unicorn craze going on (or at least that Unicorn Frappuccino all over Instagram), as well as the sushi donut trend started by the talented blogger @sobeautifullyreal. We are loving all of the beautiful creations we are seeing on Instagram, and we decided to create something of our own. We merged these two trends and brought these Unicorn Sushi Donuts to life. The best part? These don't contain any questionable dyes, but are colored with natural ingredients: beet sauekraut juice, turmeric, and e3 Live. Valentine’s Day Pink Pitaya Waffles {vegan + gluten & oil-free} sweetsimplevegan.comI created for you all a Valentine's Day Pink Pitaya Waffle recipe that you all are going to LOVE -- not just cause they are delicious, but come on, how cute are they? AND not only is this perfect for the holiday, it is perfect for kids, too! As some of you may know from my Instagram and YouTube, I have recently had a problem with my external hard drive. Well, I should say currently, because the issue is it yet resolved :/

Anyways, I am telling you this because this Pink Pitaya Waffle recipe would not have been born had that not happened. Two weeks ago I shot an oil free fudge recipe to be shared today in time for Valentine's Day (it will still be released at some point, I promise), and I was so pumped to do so. Since the files from that shoot and video are not accessible at the moment, I decided to create another recipe for you because with the and possibility that I recover my data (crossing my fingers and toes), why not cook up a brand new recipe?

So everything happens for a reason right? Scratch that. Everything happens for waffles, right?

Vegan Eggplant Meatballs {oil-free} sweetsimplevegan.comA hearty and savory flavor-explosion, and definitely THE must make recipe when you need to impress a crowd. Not only are these eggplant meatballs oil-free and low in fat, they are also packed with plant-protein from the chickpeas and tempeh! These are perfect for kids, adults, friends, family...anyone you want to share these precious little bites with ;) You can serve these eggplant meatballs atop spaghetti and marinara (my personal fav),  place them into a toasted sub with some vegan cheese and marinara as Chris did here on his Instagram, as appetizers with a toothpick and a drizzle of marinara, in minestrone soup, in a salad...the list just goes on and on!
