Vegan Carrot Lox (oil-free) sweetsimplevegan.com #oilfree #carrotlox #vegan #sweetsimplevegan #veganloxThe absolute perfect way to enjoy your Sunday brunch? Bagels and lox, of course. This carrot lox will actually blow your mind, and you will not miss out on anything, I promise. Chris and I have served this to many MANY nonvegans, and vegans as well, and it was a hit all around. Vegan Carrot Lox (oil-free) sweetsimplevegan.com #oilfree #carrotlox #vegan #sweetsimplevegan #veganloxThe inspiration for attempting this dish in my kitchen was my friend Ted (@wokwikside). Ted had invited ChrisYvonne and I over for brunch last September (wow, a year ago, how crazy!), and while there, Ted served us a plethora of homemade recipes, including vegan lox.

Popcorn Krispies S'mores w/ Sweet Potato & Black Bean Fudge {oil-free} sweetsimplevegan.comApparently National S'mores Day is Wednesday, August 10? I honestly cannot keep up with all of these holidays, who the heck picks them anyways? Well, I am going to have to thank that person in part for this recipe, cause if it wasn't for a random email hitting my inbox telling me of this holiday, this recipe would not have been born! I had so so many vegan marshmallows in my pantry and this was the perfect excuse to use them all up.Popcorn Krispies S'mores w/ Sweet Potato & Black Bean Fudge {oil-free} sweetsimplevegan.com

My favorite item at Sunday brunch growing up -- french toast! Not only does this recipe no longer require eggs, it does not have to be fried, either. Want to know my secret to the PERFECT low fat vegan french toast? BANANAS! This past weekend, Chris and I took an impromptu trip to Big Bear, CA to spend the Fourth of July weekend with my family and enjoy the festivities held at the lake. My mom surprised us with homemade bread on Saturday morning and Chris had a brilliant idea -- let's make french toast!

Healthy 3-Ingredient Vegan Pancakes {gluten- & oil-free} sweetsimplevegan.comAn easy, no-fuss recipe that is filling, comforting, and does not skimp on flavor one bit. I was actually very surprised by how fluffy these pancakes turned out to be, considering I did not use any baking soda. I have been seeing oat-banana-nut-milk pancakes all over Instagram and I finally had to try my hand at it + the fancy food styling that always comes along with it as well ;) The day I made these in the kitchen was also a day where Chris and I worked on 2 other recipes, his Epic Thanksgiving Leftovers Pizza and his Easy to Make Potato Leek Soup in Sourdough Bread Bowls as shown in the recipe video I put together for this (below). My favorite out of them had to be his bread bowl soup ;P
