Vegan Zucchini Noodle Pho w/ Homemade Broth (hclf, gf)This recipe is pho-nomenal. It is so pho-king delicious, you will love it, pho-sho. It's not only easy and pho-bulous, but it is also good pho-you, and you will be pho-ever grateful for this recipe. Okay sorry, I had to get all of that off of my chest. But really, you're going to love this! Vegan Zucchini Noodle Pho w/ Homemade Broth (hclf, gf) I'll be honest and say that prior to going vegan, I had traditional beef pho only once in my life. I know, I was shocked at myself since LA is filled with a plethora of pho restaurants. So, in order to truly know if this recipe was worthy of sharing on my website, I invited my friend Andy over to help me. He is vietnamese, and enjoys traditional beef pho weekly (I know, sad face), but I thought well maybe I could also inspire him to try making this with his family. And with the result of this recipe, I'm pretty sure I did just that.

Organic-Dried-Fruit-Compote-e1418354881392-739x1024 After Thanksgiving, I realized that I had a lot of leftover dried fruit and I had to figure out what to do with it! Well, after getting my hands on a copy of the book Veganish: The Omnivores Guide To Plant-Based Cooking, I found a recipe! I read and reviewed this book on a previous post, which you can find here <3 I definitely recommend this book to those that are transitioning into a plant-based diet. It covers basic topics of transitioning as well as specifics in cooking techniques that will help you improve your skills in the kitchen as well. Dried Fruit Compote & Giveaway

Black Bean Noodle Veggie Bowl + Homemade Peanut Sauce (gf) When I was working the Los Angeles Green Festival last month with The Coco Jack, we were directly across from the Explore Asian booth. During our shifts, they were kind enough to bring over samples of their noodles. I was only able to try the mung bean noodles, but man oh man were they good. At the end of the festival on Sunday, I headed over their booth to buy a few bags of their mung bean noodles, but they were out! I was going to just head out empty handed, but they insisted I purchase their black bean spaghetti. They said that if I loved the mung bean noodles, I would love these! I trusted them, and I am so glad I did. Black Bean Noodle Veggie Bowl + Homemade Peanut Sauce (gf)
