We're big fans of peanut sauce in our house, and we decided to share with you a new way we have been serving it up. We were inspired by the Soba Noodle Salad w/ Easy Peanut Sauce that we created and shared a couple of months ago. We tweaked our peanut sauce and somehow made it even tastier, and instead of noodles, we threw it in between two slices of our favorite bread because everything is better with bread, right? What was born, this Thai Peanut Roasted Veggie Sandwich, is incredible. It is easy + oil-free and can be made gluten-free by simply using a gluten-free bread!

Black Bean Noodle Veggie Bowl + Homemade Peanut Sauce (gf) When I was working the Los Angeles Green Festival last month with The Coco Jack, we were directly across from the Explore Asian booth. During our shifts, they were kind enough to bring over samples of their noodles. I was only able to try the mung bean noodles, but man oh man were they good. At the end of the festival on Sunday, I headed over their booth to buy a few bags of their mung bean noodles, but they were out! I was going to just head out empty handed, but they insisted I purchase their black bean spaghetti. They said that if I loved the mung bean noodles, I would love these! Rolls and Sauce Today I am going to share a recipe that I love because of the fact that it is so versatile and actually really fun to make. All you need is a blender/food processor, a knife, a cutting board and a bowl of water. I suggest laying out all of the ingredients and letting everyone that is going to join you for dinner make their own rolls. It is a chance for you to connect with others on a level far different from how you would during a normal day-to-day conversation.
