Our 100% Vegan Thanksgiving Feast! This year I was lucky enough to have my boyfriend Chris by my side, not only to join me in the kitchen, but to also help me stay grounded and grateful this holiday season. He always brings such positive energy into our time spent together, and somehow is always able to create a stress-free environment, which is exactly what I needed preparing for this day. We spent pretty much all of Wednesday and Thursday prepping what you see below, and what a whirlwind it was! In a good way, of course ;) Chris and I vlogged our two days together as well, check out the video below! [embed]https://youtu.be/ue_G6qSdVko[/embed] Below I have share all of the recipes* for you to enjoy not only on Thanksgiving, but with your loved ones year round. Remember to celebrate what IS, and not to focus on what IS NOT. Love yourself and choose health, always <3

RawSpaghetti62This meal brings me back to the weekly spaghetti dinners I used to have with my family, every Wednesday night when I would return from school. What my mom used to serve was a veggie packed marinara, noodles and a super toasty homemade garlic bread for that added crunch to complement the dish. I did my best to try and recreate that home-y feel but in a healthier, {raw} vegan way, and I think I nailed it. This dish is hearty, filling, and packed with more flavor than even I expected. You can, of course, serve this over cooked vegan noodles as well, but I decided to keep it all raw :) I use this spiralizer if any of you are interested!

jackfruithowtographicJackfruit is definitely an intimidating fruit! It's appearance is jurassic, as I have heard it described, and it is the largest born tree fruit in the world. Did you know that they are capable of reaching 100 pounds? Oh what I would do for 100 pounds of jackfruit :) But have no fear, Sweet Simple Vegan is here to help you cut through your very first jackfruit at home!Jackfruit17

Protein Chocolate Chips61I threw together a random recipe for breakfast, and it was too good for me not to blog about. So what did I do? I made it again for lunch so that I could share it with all of you ;) This recipe only requires a few ingredients, and is actually good for you, as opposed to the dairy, fat-filled, cruelty-filled ice cream at the supermarket. I listed this recipe as a dessert, but it is high carb, low fat, and mostly raw, so I say eat this whenever the heck you want. Really, do it!
