Not only does it add a new layer of texture to this salad, it brings out a whole new flavor in the kale. I made this recipe in collaboration with PlantPure Communities, a nonprofit organization that was formed partly as an outgrowth of the 2015 hit movie PlantPure Nation directed by Nelson Campbell. In order to celebrate Earth Day, they have created a 30 day challenge to eat leafy greens every day of the month of April called #30daysofgreen. #30DaysofGreen Challenge sweetsimplevegan.comPart of their work is to raise awareness about nutrition research, much of which was led by Nelson’s father, Dr. T. It is perfect for parties, holidays, wild Friday nights in...anytime you can make an excuse to make it, it's perfect for. By the way, I should add that I served this to a whole crowd of non vegans and it was devoured within 20 minutes ;) I am not sure what sparked my want of a spinach artichoke dip, but I am so glad that it happened because this was OUT OF THIS WORLD.

Barley Grass & Orange Juice This morning I woke up energized and awake, in a way that I have not been in a long while. This passed weekend for me was one of revitalization and rejuvenation. I took time for myself, to connect with my thoughts, emotions, body, and inner being. Too often do I forget that my health is all encompassing of every aspect in my life, not just my physical well-being. Remembering this fact, and becoming more aware of it, has allowed for me to definitely live my life in an improved way, filled with greater appreciation and awareness.

I asked my dad what he would want to eat at our family get together, and he said bacon. Well, you know what my initial reaction was to that...yuck! So I compromised. I told him that I would use homemade coconut bacon instead. I began googling recipes for a bacon marinade, and got to it. I took out all of my ingredients and then...I realized I had no coconut meat :,(
