Thai Peanut Roasted Veggie Sandwich {easy + oil-free} #thai #peanut #sandwich #vegan #oilfree #easyveganA unique yet simple veggie sandwich that's rich in flavor and jam packed with an array of nutrients! We're big fans of peanut sauce in our house, and we decided to share with you a new way we have been serving it up. We were inspired by the Soba Noodle Salad w/ Easy Peanut Sauce that we created and shared a couple of months ago. We tweaked our peanut sauce and somehow made it even tastier, and instead of noodles, we threw it in between two slices of our favorite bread because everything is better with bread, right? What was born, this Thai Peanut Roasted Veggie Sandwich, is incredible. It is easy + oil-free and can be made gluten-free by simply using a gluten-free bread!

Happy Friday! Chris and I are back with another video and blog post for our "What A Vegan Couple Eats In a Day" series. You can check out all of the recipes and video below, and please let us know what you think! :)
✳︎・Breakfast・✳︎ Oatmeal has been my GO TO breakfast the past couple of months, zucchini oatmeal specifically. You can't taste the zucchini + it adds some veggies and volume to the meal! I top mine off with whatever I have on hand + always a scoop of nut butter and man oh man it's the best. Writing this is making me want to get up and make some even though I just had lunch :P Chris opted for a Tofu Scramble with veggies that we needed to use up in the fridge. He ate it as is, but you can definitely serve it with toast, in a tortilla, with hot sauce, etc.

RawSpaghetti62This meal brings me back to the weekly spaghetti dinners I used to have with my family, every Wednesday night when I would return from school. What my mom used to serve was a veggie packed marinara, noodles and a super toasty homemade garlic bread for that added crunch to complement the dish. I did my best to try and recreate that home-y feel but in a healthier, {raw} vegan way, and I think I nailed it. This dish is hearty, filling, and packed with more flavor than even I expected. You can, of course, serve this over cooked vegan noodles as well, but I decided to keep it all raw :) I use this spiralizer if any of you are interested!

Vegan Zucchini Noodle Pho w/ Homemade Broth (hclf, gf)This recipe is pho-nomenal. It is so pho-king delicious, you will love it, pho-sho. It's not only easy and pho-bulous, but it is also good pho-you, and you will be pho-ever grateful for this recipe. Okay sorry, I had to get all of that off of my chest. But really, you're going to love this! Vegan Zucchini Noodle Pho w/ Homemade Broth (hclf, gf) I'll be honest and say that prior to going vegan, I had traditional beef pho only once in my life. I know, I was shocked at myself since LA is filled with a plethora of pho restaurants. So, in order to truly know if this recipe was worthy of sharing on my website, I invited my friend Andy over to help me. He is vietnamese, and enjoys traditional beef pho weekly (I know, sad face), but I thought well maybe I could also inspire him to try making this with his family. And with the result of this recipe, I'm pretty sure I did just that.
