Healthy Vegan Holiday Menu For Two {Gluten & Oil-Free} + What I Ate In A Day On ChristmasMy boyfriend Chris and I stepped back into the kitchen to bring to the table yet another easy and delicious vegan spread for the holiday season. All of these recipes are oil-free, low-fat, and can all be made gluten-free as well. We wanted to share dishes that were comforting and familiar, featuring flavors our family and readers would be receptive too.

One Pot Chili Spiced Lentils w/ Rice (recipe by Conscious Chris)

  • 1 cup lentils
  • 1 cup rice
  • 2 cups vegetable broth
  • 1/2 white onion, diced
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 8 oz mushrooms (sweet tooth is our preferred), diced
  • 1 tsp chili powder
  • 1/8 tsp cayenne pepper
  • Salt & pepper to taste

Place all into a rice cooker and cook as you would rice, stirring halfway through.
