12 Dec Organic Dried Fruit Compote (Refined sugar-free) + Giveaway
After Thanksgiving, I realized that I had a lot of leftover dried fruit and I had to figure out what to do with it! Well, after getting my hands on a copy of the book Veganish: The Omnivores Guide To Plant-Based Cooking, I found a recipe!
I read and reviewed this book on a previous post, which you can find here <3 I definitely recommend this book to those that are transitioning into a plant-based diet. It covers basic topics of transitioning as well as specifics in cooking techniques that will help you improve your skills in the kitchen as well.
What I love most about this recipe is that you can make it your own based on your preferences or what you have in your kitchen.
- Figs
- Dates
- Cranberries
- Raisins
- Apricots
- Apples
- Pears
- Nectarines
- Cherries
- Jackfruit
- Etc.
I used Figs, Apricots and Cranberries in my recipe as these were what I had leftover from Thanksgiving. I definitely reccommend this combination!
How to serve fruit compote?
- Place a dallop on top of some banana ice cream
- Spread some onto a fruit bread, such as my Plantain Chai Nut Bread (gluten- and oil-free)
- Aside some fresh fruit
- Top it with Raw Vegan Oat Crumble
- Add a spoonful to your oatmeal
- Sandwich it between my Sweet Vegan Hawaiian Buns
I added in organic raw vanilla bean powder and Organic Mushroom Matrix Reishi Powder. If you do not have vanilla bean powder, try adding in fresh vanilla bean or pure vanilla bean extract, preferably alcohol-free. The Reishi is optional but recommended! Reishi promotes vitality and provides adaptogenic properties that help combat stress. It is also highly valued for supporting respiratory function and stimulating the immune system. PrintOrganic Dried Fruit Compote
- Prep Time: 10 mins
- Cook Time: 20 mins
- Total Time: 30 minutes
- Yield: 6-8 servings
Ingredients
- 2 cups water
- 3/4 cup organic dried black mission figs
- 3/4 cup organic dried calimyrna figs
- 3/4 cup organic dried cranberries
- 3/4 cup unsulphured organic dried apricots
- 1 cinnamon stick
- 1/2 tsp raw organic vanilla bean powder or extract
- 1 tangerine or mall orange, peeled and sliced
- 2 tbsp calamansi juice (or orange juice)
- 1/2 tbsp lemon juice
- A pinch of freshly grated nutmeg
Optional
Instructions
- Roughly chop the dried fruits into pieces the size of the cranberries OR you can leave the fruit whole.
- Add all of the ingredients into a medium pot and simmer for 20 minutes or until softened and liquid has reduced.*
Notes
You can also use the oven for this recipe:
Preheat oven to 350 F.
Bake, stirring occasionally, until fruits are softened, about 30 minutes.
