My favorite banana bread recipe brought to the next level. Get ready for the ultimate vegan banana bread french toast!

Ingredients

Instructions

  1. Preheat the oven to 375 degrees F and line a large baking sheet with parchment paper.
  2. In a food processor (or blender), grind the cereal down into a rough powder, pour into a shallow dish and set aside.
  3. In a blender, blend together the flax seed meal, medjool dates, almond milk and dates until smooth. Pour into another shallow dish and set aside.
  4. Add the banana bread slices into the batter (1-2 at a time) and soak, turning once, for about 15 seconds each side.
  5. Let the excess batter drip off, then dredge the banana bread in the crushed cereal, pressing gently to be sure it adheres. Set aside on a plate and continue with the remaining slices.
  6. On a nonstick skillet over medium heat, add the french toast and cook until golden brown, about 3-4 minutes per side. Transfer to a baking sheet and bake until cooked through, about 40 minutes, flipping halfway through.
  7. Serve with maple syrup and fresh fruit.

    I didn’t think french toast could get any better but you’ve made it so by adding banana bread to the mix and giving it a crust. It sounds delish!

    I absolutely looooove this recipe! I love eating banana bread for breakfast, but I also eat French toast for breakfast less often- I love it just as much though! I love that you combined my two favorite breakfasts and that it was simple enough for me to create! This recipe is a winner!

    Mm, French toast is a favorite of mine! I love Erewhon corn flakes, but I’ve never tried their cinnamon crispy rice cereal! I’ll have to check them out!
