Healthy 3-Ingredient Vegan Pancakes {gluten- & oil-free} sweetsimplevegan.comAn easy, no-fuss recipe that is filling, comforting, and does not skimp on flavor one bit. I was actually very surprised by how fluffy these pancakes turned out to be, considering I did not use any baking soda. I have been seeing oat-banana-nut-milk pancakes all over Instagram and I finally had to try my hand at it + the fancy food styling that always comes along with it as well ;) The day I made these in the kitchen was also a day where Chris and I worked on 2 other recipes, his Epic Thanksgiving Leftovers Pizza and his Easy to Make Potato Leek Soup in Sourdough Bread Bowls as shown in the recipe video I put together for this (below). My favorite out of them had to be his bread bowl soup ;P

I put together this recipe 2 days ago, and I have already made it twice since then. Not only is it a simple recipe, but it keeps well for a few days and when served with rice, is a substantial and nutrient dense meal. Always be sure to use organic & non-GMO tofu, and for this recipe, opt for extra firm to avoid crumbling. This recipe is a part of my Healthy Oil-Free Vegan Christmas Menu from my 2015 dinner with my boyfriend Chris. We worked together in the kitchen to put together a few dishes to share with you all here on our blogs, to give you some inspiration and ideas for easy recipes you can try out during your next {holiday} gathering or dinner party.

After Chris had moved to LA in October, we had discussed making homemade veggie burgers for our blogs, all thanks to an at home dinner we had with Hillary Eats Well Hemp & Greens Burgers we had found at our local Whole Foods Market. This burger tastes like Stove Top Stuffing to me, something that I grew up eating, and recently created a vegan substitute for! I loved the herb and spice mixture of the patty, but what I did not enjoy was the amount of oil in the ingredients. I was determined to create an oil-free version of these with my own personal touch, and that is exactly what I did. Plus, #Novemburger is in full effect, so celebrate with a fun veggie burger recipe...or two, a bonus one is featured below ;) Chris and I aren't sure if that is even a thing, but with this, we will make it happen!

I also wanted to challenge myself and try for a gluten-free recipe as well.

'Cheesy' Balsamic Savory Granola with Watermelon Seeds & Sun Dried Tomatoes (gluten-free)I decided to change things up a bit and try my hand a savory snack. When I want to nibble on something throughout the day, savory treats are sometimes necessary, but not as often available to to me unless I dig into veggies or something like avocado toast. I wanted to create a quick grab a handful and go type of snack and this was a winner! Not only is this great for snacks but it also pairs well with salads, soups, {especially my Curried Sweet Potato Soup}, raw vegan pastas + more! And this recipe came together a lot easier than I had expected.
