✳︎・Breakfast・✳︎ Oatmeal has been my GO TO breakfast the past couple of months, zucchini oatmeal specifically. You can't taste the zucchini + it adds some veggies and volume to the meal! I top mine off with whatever I have on hand + always a scoop of nut butter and man oh man it's the best. Writing this is making me want to get up and make some even though I just had lunch :P Chris opted for a Tofu Scramble with veggies that we needed to use up in the fridge. He ate it as is, but you can definitely serve it with toast, in a tortilla, with hot sauce, etc.

Growing up I used to get 'hot lunch' in middle school, anyone else know what I'm talking about? The side in the meal was often scalloped potatoes, and it was my absolute FAVORITE.
