Are you all ready for the super bowl? I know I am. And why is that? Well, it's because I am making this dip. It's low-fat, high carb- oil-free, and easy to make! It's filled with a plethora of vegatables (and even fruit!) that will allow you to not only enjoy the big game celebration, but also a nutrient-dense snack or meal.Layered Dip4503Layered Dip4472Unique, flavorful and nutrient dense layers, coming right at ya!

Cinnamon Maple Delicata Squash Salad w: Vegan Jackfruit 'Bacon' This recipe stemmed from my attempt to create a recipe to use for the big game coming up here in the U.S., aka the Super Bowl. I asked my dad what he would want to eat at our family get together, and he said bacon. Well, you know what my initial reaction was to that...yuck! So I compromised. I told him that I would use homemade coconut bacon instead. I began googling recipes for a bacon marinade, and got to it. I took out all of my ingredients and then...I realized I had no coconut meat :,(

I came across Cissy on Instagram when I first started my account, through Ellen Fisher, and I have been following her ever since. What I love most is that she is real and straight to the point about her life and her beliefs. She shows families just how easy and important it is to raise your children with a foundation of knowledge in nutrition. She even includes kid-friendly recipes in her posts, like the one below that you guys will love!

Without further or do, let's meet Cissy and make some muffins!

Vegan Kare Kare (Filipino Peanut Stew) + Bagoong What a lot of my readers, and people in general don't know is that one side of my family originated from the Philippines, and the other from Ecuador. Although I am not filipino in blood, I grew up with the culture. I grew up with only tidbits of the language, but with a majority of it's food, customs and mannerisms. One of my childhood memories with always be my Auntie Peachy's Kare Kare. I can picture her in my old kitchen with the giant wok and wooden spoon, spending the afternoon in the kitchen just to give us kiddies a taste of her filipino specialty. She is the best filipino cook in my family, in my honest opinion, so she was the one person I was nervous to serve this version to, and the only reason why this made it to my blog was because I received her approval, and her  request for this recipe ;)

What a beautiful January day it was here in California last Saturday, 1/2/15. My friend Leanne Bishara and I got together to shoot a few photos for my blog that I will be sharing with you all today, some beautiful headshots out in the Arlington Garden in Pasadena, CA. I found out that Pasadena has a website dedicated to the garden, which you can find here.

And above is the photo I have chosen to use for my headshot. I know it isn't a typical minimalistic headshot photo, but I really think that its inclusion of a fruit tree embodies who I am.

After having some fun in the kitchen, Leanne Bishara  and I relocated to Arlington Garden in Pasadena, CA. We both had never been to the location, and we did not know what to expect, but it was the PERFECT location.
